An evening that gets under your skin – quite literally. On October 17, 2026, we welcome a very special guest to Mesnerhaus: Walter Grüll, Austria’s legendary caviar pioneer from Grödig near Salzburg.

On this evening, Walter Grüll will break down a whole sturgeon together with our guests – a rare experience where you witness firsthand how precious delicacies are created from this noble fish. The freshly prepared sturgeon will become part of our exclusive 6-course menu, prepared directly for you.

From the finest Grüll caviar, our Michelin-starred chef Josef Steffner creates a dish that perfectly captures the connection between Salzburg’s waters and the creative Mesnerhaus cuisine.

For decades, Walter Grüll has stood for fish specialities at the highest level. At his facility in picturesque Grödig, delicacies are lovingly crafted by hand – from legendary sturgeon caviar to smoked rarities. His philosophy: respect for the product and the careful handling of precious resources.
