The Cooking Class of the Year – with herb expert Alexandra Klein
On 25 September 2027, the Mesnerhaus invites you to a very special afternoon – and we are certain: this will be the cooking class of the year.
Alexandra Klein, known as die Kräutermadame – the Herb Madame, is coming to the Lungau – and in a way, coming home. Growing up in Salzburg, she spent her childhood holidays every year in the Lungau and Pinzgau. Today she lives with her family at the foot of the Untersberg and has become one of Austria’s most celebrated wild herb and fermentation experts.
Her story is remarkable: trained at the Wellness-Gastronomieschule in Hallein, she went on to cook at the legendary Hangar-7 in Salzburg and on Laucala Island – Dietrich Mateschitz’s private island in the Pacific. Today she shares her passion for wild herb cuisine, fermentation and kombucha through workshops, on Instagram and in her cookbook “Alles im Grünen” – with a clear philosophy: butter is welcome, meat is allowed. Wild herbs should taste great, not just be good for you.
September is a very special time in the world of wild herbs – the season is slowly drawing to a close, and that is precisely what makes the harvest so precious and valuable. The focus of this afternoon, however, is the art of fermentation: above all kombucha – alive, complex and a perfect companion for autumn cooking. Alexandra will show how something truly extraordinary can emerge from simple ingredients and a little patience.
Together with Josef Steffner, you will spend this afternoon diving into the fascinating world of wild herbs and fermentation – cooking, discovering, tasting and taking home what matters most: new ideas, new flavours and plenty of joy.
